Rosehip jelly recipe:

Ingredients:

2 cups of rose hips (pre-washed and cleaned of seeds and "hairs")
4 cups of water
1/2 cup of sugar (can be adjusted depending on preferences)
1 sachet (about 10 g) of gelatin

Instructions:

In a separate bowl, soak the gelatin in cold water and let it swell for 5-10 minutes.

In a saucepan, mix the rosehip and water. Heat over medium heat, bringing to a boil, then turn down the heat and cook for 10-15 minutes.

Remove the pan from the heat and let the broth cool slightly. Then strain the broth to get pure rosehip juice.

Return the rosehip juice to the saucepan, add the sugar and heat, stirring, so that the sugar completely dissolves.

Gradually add the gelatin to the juice and sugar mixture, stirring constantly. Continue to heat the mixture until the gelatin is completely dissolved, but do not bring it to a boil.

Remove from the heat and allow the mixture to cool slightly.

Pour the jelly into molds or glasses.

Place the jelly molds in the refrigerator and refrigerate for at least 4 hours or until completely solidified.

Garnish with fresh rosehip berries or mint leaves before serving.
